Potato pancake sandwiches

Try out a potato pancake sandwich at Hoboken on Rye in Hoboken, New Jersey.

"You feel like you're in my Jewish grandmother's living room on the couch," said Ashley Blair, of Hoboken on Rye.

Ashley Blair and her brother John Blair want you to feel like part of the family at their Jewish style deli in Hoboken.

It's called Hoboken on Rye.

It's a small shop with a tiny window counter that is serving up big portions.

There's lox, whitefish, knishes, and soup that gets added boost from fresh roast turkey meat.

Of course there are sandwiches.

While you can get that sandwich on rye, why not get it on a potato pancake.

John uses a family recipe.

"This is my mother's but she learned from her mother," John Blair said.

John begins by shredding the potatoes and onions in a food processor.

He then adds eggs, salt, pepper and matzo meal.

He mixes that and makes little patties and fries them.

You can choose whatever meat you'd like to put in between.

Hoboken on Rye is very much a family place.

Mom bakes the desserts and dad is often on hand to help.

Potato Pancake Recipe

Ingredients
7 large russet potatoes peeled and rinsed
1 medium yellow onion
5 eggs beaten
1 cup matzo meal
1 1/2 tsp salt
1/4 tsp black pepper
veg. oil for frying

Grate potatoes and onion in bowl or food processor, drain in a colander in sink. Add eggs, matzo meal, salt and pepper to potatoes and onions. Mix well. Heat oil in a large skillet over medium high heat. Form potato mixture into pancakes cook 2-3 minutes on each side. Place on paper towels to drain grease.

Make a potato pancake sandwich by putting your favorite meats and condiments in between two potato pancakes.
