Hot dogs and beans!

September 11, 2009 3:22:51 PM PDT
A restaurant that just opened last month is all about an American classic: hot dogs! They also serve breakfast, but the mainstay of the menu is hot dogs.

Bark is located at 474 Bergen Street in Park Slope, Brooklyn.

Bark baked beans recipe

Ketchup 1 1/4 cup
Mustard 1/2 cup
Molasses 2 oz.
Brown Sugar 1/2 cup
Cider Vinegar 1/4 cup
Salt 2 tsp

Beans to Soak:

Marifax or Cranberry Bean 1 lb.
Smocked Ham Hock, neck, leg 1/2 a hock, split (what ever you can find)
Water 1gal

To Start:

Grapeseed or Vegetable Oil 2 tsp
Bacon, large dice 1/2 lb.
Garlic, chopped 3 cloves
Onion, chopped 2 onions
pinch of salt

Seasoning Mix

Ketchup 1 1/4 cup
Mustard 1/2 cup
Molasses 2 oz.
Brown Sugar 1/2 cup
Cider Vinegar 1/4 cup
Salt 2 tsp

Soak beans with water and hock for at least 8 hours.

Cook bacon in grape seed oil, then add garlic and onion and cook slowly. Add seasoning base and mix through. Drain beans and add to pan. Add water to cover by 2 inches, then add smoked pork. Bring to a simmer and bake in oven for 8-12 hours until cooked through. Alternately, pre cook the beans and add to the seasoning mix to reduce cooking time in oven. (if beans are pre cooked, bake in oven for 1 hour)
